Le Voyage by Daniel Boulud on Celebrity Cruises

Celebrity Cruises offers up to 32 distinct restaurants, bars, and lounges aboard their Celebrity Edge class ships. Menus are crafted by Michelin-starred chefs that include Cornelius Gallagher. The inspiration for all the menus is the regions each ship sails to around the world. The culinary team uses the freshest locally sourced ingredients and adds a touch of creative flair to each dish to wow guests.

One of the best culinary experiences at sea on the Celebrity Beyond and Celebrity Ascent is the specialty restaurant Le Voyage by Daniel Boulud. This esteemed French chef is best known for his two Michelin stars restaurant Daniel in New York City. As a successful restaurateur, Chef Daniel also has restaurants in Palm Beach, Miami, Toronto, Montréal, Singapore, the Bahamas, and Dubai. 

Reserved guests enter the sophisticated dining room adjacent to the spectacular Grand Plaza. Stepping up to a sliding glass door, the culinary journey begins with impeccable service starting in the stunning entryway. The elegant dining room offers soft tones and luxury design elements.

Winner of Wine Spectator’s ‘Best of Award of Excellence’ 2023, Le Voyage offers guests a choice of more than 400 bottles of wine to pair with their multi-course meal.

Culinary experiences include a three-course dinner menu with wine and a glass of champagne, and a Chef’s Tasting Menu offering a sophisticated gastronomic experience featuring an array of Chef Daniel’s specialty dishes. There is also a five-course plant-based Chef’s Tasting Menu. A supplemental fee will be charged to guests’ stateroom accounts.

Michel Roux will partners with Cunard

Onboard another luxury cruise line, Cunard has partnered with Michelin star Chef Michel Roux, owner of the two Michelin-starred restaurant Le Gavroche in London. Together they are partnering with the Norwegian Seafood Council to bring an exclusive Le Gavroche dining experience onboard Queen Mary 2 and Cunard’s newest ship Queen Anne in 2024.

After closing his London restaurant on January 13, 2024, he is now focused on Le Gavroche at The Verandah aboard Cunard’s flagship Queen Mary 2 for her sailing to Hardangerfjord on June 2, 2024. 

The chef will celebrate a five-night residency that is curated for up to 60 diners each evening. Chef Michel will be showcasing a beautiful variety of his signature seafood specialties and elevated culinary classics through a five-course tasting menu. Courses will offer an infusion of flavors from the sea, that are elegantly presented with the very best produce.

Chef Masaharu Morimoto aboard Holland America Line

Accomplished Iron Chef Masaharu Morimoto features a special elevated dining experience for passengers onboard Holland America Line.

Morimoto is the cruise line’s ‘Fish Ambassador’ for the cruise line’s first-of-its-kind Global Fresh Fish program, offering more than 80 varieties of fresh fish sourced locally from across the world.

Holland America Line’s Nieuw Amsterdam opened the first stand-alone restaurant at sea for Chef Morimoto. Morimoto By Sea is located adjacent to the Tamarind restaurant on the Observation Deck.

This esteemed chef’s creations are also highlighted on menus in every Holland America Line ship. Signature dishes include Fresh Halibut XO served with Asian vegetables and dried shrimp and scallop XO sauce. Other exciting menu items include Morimoto Epice Lobster Tails with seasonal vegetables and lemon foam, and Fresh Black Cod Yuzu with yogurt miso and pickled vegetables.

Morimoto By Sea is a pop-up culinary experience on 10 of the fleets ships. Diners will experience the menu at the Pinnacle Grill or Tamarind dining venue. Menu items across are sourced globally from a network of 60 ports to serve 80 different types of fresh fish onboard to prepare sushi plates with nigiri salmon, hamachi, maki with ebi tempura and Dungeness California salmon shikai maki. Main courses include Angry Lobster Pad Thai, Shrimp Three Ways ‘Morimoto Style’ and Japanese vegetable curry.

Other menu items include tempura calamari salad with white miso dressing, hamaci tacos, sticky ribs and Morimoto fresh tuna pizza. Passengers can make a reservation on Holland America Line’s Navigator App or when they are onboard the ship. The restaurant does have a $55 per person cover charge and an additional 18% gratuity.

Chef Morimoto also will feature his exclusive alcoholic beverages by the glass or bottle. Start a meal with a flute of Morimoto Dream Brut Rose’, or his Morimoto Grgich Hills Chardonnay and Cabernet Sauvignon. He also offers four different sakes including Sake Junmai Daiginjo Morimoto Sake Sparkling Nigori.

Windstar Cruise

The official cruise line of the James Beard Foundation is the luxury, small ships Windstar Cruises. Celebrating its 10th Anniversary collaborating with the James Beard Foundation, a nonprofit organization’s whose mission is to celebrate, support, and elevate the people behind America’s food culture, while championing a standard of good food anchored in talent, equity, and sustainability. The Foundation firmly aligns with Windstar’s commitment to fresh and local epicurean experiences around the world, as well as efforts to reduce food waste.

James Beard Foundation sailings include plenty of time to personally interact with the chefs through a chef-hosted dinner and wine pairing, two onboard cooking demonstrations with takeaway recipes, and a shoreside market tour. More than three dozen James Beard Foundation-affiliated chefs have sailed with Windstar since the partnership’s inception. Together they expand a series of themed culinary sailings on Windstar’s fleet of yachts accommodating between 148 to 342 guests.

Distinguished ‘All-Star’ James Beard Foundation & Wine Cruises includes ‘Cuisines & Cultures Of Spain, Portugal, France and Ireland’. Guests will meet Bravo’s Top Chef chef Tanya Holland. Starting on May 23, 2024 in Lisbon, sail for 9 days to Dun Laoghaire (Dublin), experiencing Bordeaux with chef Tanya, known for her now-closed Brown Sugar Kitchen in Oakland, CA. This Top Chef contestant is a podcast host of ‘Tanya’s Table.’

On Aug. 28, 2024, the James Beard Foundation & Wine Cruise: ‘Adriatic Archipelagos & Greek Goddesses’ sails for 8 days on a culinary journey onboard the Wind Surf starting in Venice, Italy. There will be stops in Croatia, Montenegro, and small ports in Greece before finishing in Athens. Visit the ports with 2023 Best Chef: Midwest Semifinalists nominee, chef Loryn Nalic.
